I built a data logger a few years back. The data you likely want is on the CAN BUS network. You’ll need a CAN BUS hat for a pi or a pi with it baked in. There are other ways but you will likely end up realizing a pi or similar is best.
You’ll need to log the data while away from home and then sync the data when WiFi is available. Requiring the pi to stay powered after the car shuts off. Easy to do with some relays.
Depending on what data you are looking for it shouldn’t be too much work to get going on logging.
All I can think of is battery life may take a hit. OSX is incredible with battery life.
That said I get decent battery life on Linux. 9 hours idle or light use…maybe more. Not sure yet because I just replace the battery.
I have a cat, two dogs, married, high paying 30 hour a week job, no debt, several good friends, tight family. Still net negative.
My experience has been a net negative and I don’t event have it that bad.

Rebuild to different disks than the ones you backed up though. Don’t restore over your working data.

100TB, external enclosures, no backups 🤔 I would pickup a used storage server with a lot of drive bays from eBay. The external bays seem attractive but I’ve never heard good stories about performance or reliability.

An ESP8266 with temp sensor and a script to pull public weather station data with your local temperature readings into a text file is likely the cheapest way.

I’ve only heard of them asking for money if you connect to a computer with a paid account. Are you connecting to computers with paid teamviewer instances?
I strongly disagree with the too much RAM hate. I have 32GB and run out. 64GB would be freedom to do whatever. That’s how computing should be.
Just docker and some scripts. I used unraid for a bit but it annoyed me.
I got burned on a pixel device and I’ll never go back. In my case the phone was fine but Google botched an update and it took a year to really sort out. I stopped using the phone after two months of near unusable phone functions like answering a call. Much later I tried it again and it worked fine.
So they might do updates for a while but are they shit updates?
The only type of data I care about is photos and video I’ve taken. Everything else is replaceable.
